Whenever I visit my mum in Gisborne on the East Coast of New Zealand, she always makes these amazing scrambled eggs, so one morning my eagle eye watched her prepare them and really, there's nothing to it!
Ingredients - serves 2 4 large eggs 1/4 cup milk 1 small red onion, finely chopped 1 tablespoon of fresh chopped parsley Cracked black pepper Salt 4 slices of wholegrain bread
Heat a pan with a little oil, pour in the egg mixture and add the red onions.
As the egg starts to set, add the parsley and mix with a wooden spoon or flat spatula to scramble the eggs.
Season with salt and pepper and serve on crusty wholegrain toast.
