BABY BEETROOT, WALNUT & FETA SALAD
A sweet nutty creamy salad with delicious spicy rocket leaves and a zesty orange dressing. This salad is perfect for those with a sweet tooth, I find it oddly sweet tooth satisfying and wonderfully refreshing!
Ingredients
6 baby beetroot (we used tinned)
2 tablespoons walnut pieces
80g reduced fat feta cheese
50g rocket leaves
2 tablespoons flat leaf parsley
Dressing
Juice of half an orange
2 tablespoons extra virgin olive oil
Cracked pepper to taste
Orange zest (garnish)
Take two plates and place equal amounts of rocket leaves onto each.
Slice the baby beetroot into quarters and place on top of the rocket leaves.
Break or slice the feta into pieces and add to the salad finishing off with parsley and orange zest sprinkled over the top.
Dress the salads with the orange and olive oil dressing.
DRESSING
Into a jar mix the juice, olive oil together and add some cracked black pepper to taste, presto!
