GARLIC, CHILLI & SOY PRAWNS ON GREEN TEA SOBA NOODLES
Prawns, prawns, give me more prawns! I love seafood but prawns with one my favourite herbs coriander, is heaven on my palate and very good for you. If coriander isn't a herb that you like, try flat leaf parsley instead.
Ingredients - serves 2 150g large prawns 1 teaspoon crushed chilli 1 small red onion, chopped 2 cloves garlic, chopped 1 teaspoon soy sauce Cracked black pepper 1 tablespoon olive oil 1 cup broccoli florets 2 tablespoons coriander, chopped 1/2 pkt soba noodles (I used Green Tea flavoured) Spray oil Place the oil, garlic, chilli, soy sauce and black pepper into a bowl and add the prawns, cover and refrigerate for 10 minutes.
Heat a pan or wok and spray with oil. Stir fry the broccoli and onions until almost tender then add the prawns and stir fry until cooked.
Cook the soba noodles as per instructions on the pack, drain and add to the prawns and stir through.
