Crisp pears, salty bacon, peppery rocket and crunchy walnuts, a wonderful textural combination for lunch! This delicious and healthy salad is perfect for lunch or as a side dish to your evening meal. It requires nothing but lemon and olive oil as a dressing and takes minutes to prepare. It's up to you whether you leave the skin on the pears, I do, it's extra fibre!
Ingredients - serves 2 1 packam or bosc pear, cored and sliced thinly 1 generous handful rocket leaves 1/4 sliced red capsicum 1 small red onion, sliced 2 rashers of lean bacon, chopped 2 tablespoons chopped walnuts 1/2 lemon 1 tablespoon of extra virgin olive oil Parsley and/or sliced spring onions to garnish
On two plates arrange the pear, rocket, capsicum and onion.
Fry the bacon dry in a non-stick fry pan until cooked and sprinkle the cooked bacon over the salads.
Add a tablespoon of walnuts per plate, squeeze over each with lemon juice and drizzle with olive oil.
