I never used to like meringues until I came across a tasty dessert called Eton Mess, a dessert with loads of cream, fresh berries and crispy meringues. So here's my take on the Eton Mess called Barb's Mixed Berry Mess. I have removed the cream and used greek yoghurt. You can use sweetened yoghurt if you wish, but watch the calories! The longer the berry mess chills in the fridge, the softer the meringues become so if you like a crispy meringue, prepare it just before you're about to serve it.
2 cups lite greek yoghurt 3 meringues, broken 1/2 cup fresh berries, any kind 2 tablespoons grated 70% cocoa dark chocolate to decorate
Defrost the frozen berries and push through a sieve to make a puree. You can also blend them if you wish but drain the berries first then blend the fruit, then add a tablespoon of the drained liquid to create a sauce, if it's still too thick, just add a little more of the liquid. Add the icing sugar to sweeten.
Place the greek yoghurt into a bowl and fold through the berry puree BUT do not mix too much, you want the mix to have ripples of berry sauce through the yoghurt, similar to a berry ripple icecream.
Take a glass and place a layer of the yoghurt mixture and top with meringue pieces and a few fresh berries. Repeat this process and top with shavings of dark chocolate and the rest of the berries.
