This is a lovely sweet baked treat to have with your favourite hot drink, for best results, use very ripe bananas, the kind where the skin is almost black to produce the most moist loaf.
Ingredients - makes 1 loaf 1 cup wholemeal self raising flour (or 1 cup wholemeal flour + 1 teaspoon baking powder) 3/4 cup self raising flour 1/4 teaspoon baking soda 1/4 teaspoon salt 1/2 cup sugar 2 eggs 1/4 cup milk 75 g butter, melted 1 cup mashed banana 1/2 cup chopped walnuts
Sift flour, baking soda, and salt into a bowl, mix in the sugar.
In another bowl beat eggs then stir in milk, butter and mashed banana. Add to the dry ingredients stirring until the ingredients are just combined. Add the walnuts and mix through.
Spoon into a greased and lined 23 cm loaf tin
Bake at 180°C for 45-55 minutes
Leave the loaf to cool for 10 minutes before removing from the tin.
