Who doesn't love pancakes! There's nothing like butter dripping, syrup oozing thick buttery pancakes BUT I cannot have those anymore! These pancakes are a great alternative and with the addition of bananas, ricotta and sugar free maple syrup, you needn't feel like you're missing out.
Ingredients - Serves 4 2 eggs 2 cups low fat milk 1 cup wholemeal flour 1 cup white flour 2 teaspoons baking powder 50g melted butter 2 bananas, sliced thickly 250g Ricotta, extra light 2 tablespoons icing sugar 120ml sugar free maple syrup
Whisk the eggs and milk together in a large bowl. Sift the flours and baking powder together and add to the eggs and milk. Add the butter and whisk well until smooth, chill for 1 hour.
Heat a fry pan with a little spray oil and spoon 1/4 cup of mixture into the pan. When bubbles begin to appear, flip the pancake over to cook the other side.
Mix the icing sugar with the ricotta and mix until smooth.
To serve layer the pancakes (4 per plate) with bananas and maple syrup and finish with a pancake on top, a few banana slices and a good dollop of ricotta.
