I love bagels! and this recipe is really filling, great for vegetarians and lovely to have on a cold morning, just don't forget to brush your teeth after eating all that garlic :)
Ingredients - serves 4 1 cup sliced button mushrooms 1 tablespoon of soy sauce 2 cloves garlic, chopped 4 size 7 eggs 4 bagels (savoury) 1/2 cup grated edam cheese Parsley, chopped Cracked black pepper to season Olive oil spray
Heat a non-stick pan on medium heat and spray with olive oil spray. Add the mushrooms and garlic and cook till tender. Toss in the parsley. (optional)
In another hot pan, spray with oil and crack in the eggs. When the egg starts to set, flip over and cook the other side.
Warm the bagels then cut them in half and top the bottom half with some edam cheese, then the mushrooms, the egg then the top of the bagel, very easy, very delish!
