Now this has to be the easiest meal of all time, a flat bread topped with your favourite toppings to produce one of the world's fastest tastiest meals! To keep the calories down, I use either tortillas or pita bread as a base.
Here are my favourite pizza toppings, I know some of you may think...uh carrots? but seriously, they can be used, yummo! A great alternative for pizza sauce is hummus, it's good for you, packed with garlic and tastes delicious!
It's a Garden! - serves 1 - 2 1 medium pizza base of your choice (pita or tortilla) 1/4 cup low fat pasta sauce 1/2 cup grated carrot 1/2 cup baby spinach, shredded 1/2 cup sliced button mushrooms 1/2 cup edam cheese, grated
Spread the pizza base with pasta sauce. Top with the carrots making sure not to place them too close to the edges, follow with the spinach. Place the mushrooms over the vegetables making sure the carrot is covered as this will stop the carrot drying out, finish off with the grated cheese and bake until the bottom of the base is crisp and the cheese has melted.
Remove from the oven and top with shredded basil leaves.
Seafood - serves 1 - 2 1 medium pizza base 1/4 cup low fat pasta sauce 8 large prawns, raw, heads and tails removed 2 cloves garlic, grated or chopped 1 teaspoon paprika 1 tablespoon of olive oil 1 small red onion, sliced 1/2 cup edam cheese, grated 8 black olives 2 tablespoons coriander, chopped
Spread the pizza base with the pasta sauce.
Toss the prawns into a bowl with the paprika, garlic and oil and coat well. Arrange the prawns over the pizza base and add the olives. Sprinkle over with the edam cheese, place into a hot oven and cook until the prawns are done.
